Method

Add the sugar and lemon zest to a bowl and combine using clean fingers until mixed well and fragrant.

Add in the milk, original spread, lemon juice and vanilla extract. Whisk well.

In a separate bowl, combine the flour, baking powder and salt.

Add the dry into the wet ingredients and whisk until just combined.

Gently fold through the blueberries.

Preheat your waffle iron and grease well.
