Method

  1. Place the rinsed yellow split peas into a large saucepan, add the Nuttelex veggie stock, garlic, ginger, and peeled shallots. Bring to the boil, turn heat to low, cover, and simmer 20 minutes, stirring occasionally.
  2. Stir in the remaining ingredients, bring back to the boil then lower the heat and simmer gently, covered, for a further 30 minutes or until all the vegetables are tender, stirring occasionally.
  3. Transfer Tagine to a serving dish, scatter with toasted cumin seeds, and serve with steamed couscous.
