Method
Heat the Nuttelex Olive Oil Spread in a large heavy-based frying pan and sauté the onion, garlic and diced green capsicum until soft and golden – about 5-10 minutes.
Add the smoked paprika and cayenne pepper and cook, stirring for another minute until it smells fragrant
Add the remaining ingredients except for the cannellini beans to the pan, stir together and season lightly with sea salt & freshly ground black pepper
Bring to the boil, then reduce heat and simmer, partially covered for 20 minutes, stirring occasionally
Add the cannellini beans and simmer, uncovered, for A further 15-20 minutes until the bean mixture has reduced and thickened. Stir occasionally
Taste and adjust seasoning with freshly ground black pepper and sea salt
Serve straight from the pan with crusty bread or grilled sourdough
