Method

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, celery, zucchini and garlic and cook for 3-4 minutes.
  3. Pour in the stock and potatoes and simmer for 20 minutes until the potatoes are tender.
  4. Add peas, kale, spinach and basil. Cook for 3-4 minutes until greens have softened.
  5. Blend with a stick blender until smooth and creamy.
  6. Add in the coconut cream and blend again.
  7. Season with salt and pepper to taste and finish off with the lemon juice. Serve.
