Place grated zucchinis in a large bowl, sprinkle with salt and let sit for 10 minutes. Next, place the zucchinis in a clean tea towel or a mesh veggie bag & squeeze out the excess liquid.
Next, place all the ingredients into a large bowl and stir well with a wooden spoon to combine to form the batter.
On medium-high heat, add enough olive oil to cover the base of a frypan. With the aid of an ice-cream scoop or 1/4 measuring cup, scoop even sized amounts of batter into the frypan then use a spatula to flatten your fritters.
Cook in small batches a few at a time. Fry for 3 minutes or so, then gently flip to cook the other side. Drain on a plate lined with paper towel.
