Add onion, carrot and celery and cook for 5 minutes until softened.
Stir through garlic and cook for another minute.
Add tomato paste and cook for 1 minute.
Pour in diced tomatoes and Nuttelex veggie stock.
Stir through oregano, thyme and chilli flakes, potatoes, zucchini and cannellini beans then bring to a boil. Lower heat to gently simmer and cook for 15 minutes or until potatoes have softened.
Turn heat up and add in the pasta. Cook until tender.
Season with salt and pepper to taste then add in the spinach and cook for 1 minute until wilted.
