Method

  1. Heat the olive oil in a pan over medium high heat. Add in the onion, garlic and chilli and fry for 2 minutes until translucent and fragrant.
  2. Add in the tomato paste and sun dried tomatoes and cook for another minute, stirring constantly to avoid it from burning.
  3. Add in the vegetable stock, coconut milk and butter beans and stir well to combine. Pop the lid on and gently simmer for 5-6 minutes or until thickened. If you want the mixture to be saucier, add in more vegetable stock.
  4. Taste and season with salt and pepper. Stir through fresh parsley.
  5. Divide into bowls and serve with crusty bread.
