Method

  1. For the batter, combine the almond milk, vanilla extract, maple syrup, cinnamon, salt and cornstarch in a deep plate and whisk until well combined.
  2. Heat a few tsp of butter or oil in a large frypan over medium heat to lightly coat the surface.
  3. Dip your slices of bread into the mixture and allow each side to soak for about 15-20 seconds until all of the bread is well coated.
  4. Transfer into the preheated pan and cook over medium heat for about 2-3 minutes on each side until golden. You may have to do this in 2 batches depending on the size of your pan.
  5. Divide onto plates and top with yogurt, cherry compote and fresh berries. Dust with icing sugar and enjoy!

Chefs Tip

Ensure you use thicker slices of bread, preferably day-old/slightly more stale, so it’s not as soft and can absorb the batter without being overly soggy or falling apart.
