Seasonal Greens with Green Goddess Dressing

This salad is the perfect side to any meal, fresh and full of flavour it cuts through and brightens the palate.


For the Salad

2 tsp Nuttelex

1 cup flaked almonds

2 cup assorted leaves

edible flowers

half of an orange

For Green Goddess Dressing

1 large avocado, peeled, pip removed

1/2 bunch coriander, washed, patted dry

1/2 bunch basil leaves, washed, patted dry

1/2 bunch mint leaves, washed, patted dry

1 medium pink shallot, roughly chopped

1 garlic clove

1 tbsp brown rice vinegar

1 lime, juiced

1 lemon, juiced and zested


1Melt Nuttelex in a medium sized frypan, add flaked almonds and lightly fry until crisp and golden. Transfer to a paper towel.

2Combine salad leaves with flaked almonds and serve with edible flowers and dressing on the side, as desired.

For the Dressing

1Blend all of the green goddess dressing ingredients in a high-speed blender and process until smooth.

2Transfer to a serving vessel or seal and store in an airtight container, chill for up to 3 days
