No Bake Pumpkin Chocolate Bars (Vegan + Gluten Free)

These simple, no-bake bars are a healthier take on traditional sweets and make a great Halloween Treat.

Ingredients

4 tbsp plant-based Nuttelex

2 cups pumpkin seeds toasted

10 dried dates (stones removed)

4 tbsp maple syrup

1/2 an avocado

2 tsp vanilla essence

1/2 tsp salt

Chocolate Coating

2 cups dark chocolate

4 tbsp plant-based Nuttelex

garnish - pumpkin seeds

Directions

1Place all the ingredients for the filling into a food processor.

2Blitz the filling in the food processor until it forms a paste.

3Line a bread loaf tin with baking paper. Transfer the paste into the tin and press firmly into a smooth flat block. Place the tin into the freezer for about 1 hour until the paste firms up.

4Once the bars are firmed up from the freezer remove the tin from the the freezer. Lift the block out of the tin, then trim the edges and cut into equal bars.

5To make the chocolate coating - place the chocolate and Nuttelex into a bowl. Microwave in bursts of 30 seconds until the chocolate melts and is well combined with the Nuttelex.

6Place each bar onto a fork and lower into the melted chocolate mixture to coat all around. Run the bottom of the fork along the edge of the bowl to get rid of any excess chocolate. Place the chocolate bar onto another lined tray. Repeat until you have coated all the bars.

7Garnish the chocolate bars with pumpkin seeds and place in the fridge to set for about 30 mins until the chocolate coating has hardened. Transfer onto a plate and serve.
