Maple Butter Glazed Roast Carrots

Caramelised in a light, sweet and buttery glaze this wickedly good carrot dish is ideal as a side, midweek main or buffet dish as it goes with virtually anything.

TOP TIP: This buttery glaze also works beautifully with roasted beetroots or cubed, roast sweet potatoes.

Ingredients

2 tbsp Nuttelex

300 g baby carrots

2 tbsp Maple syrup

sea salt and pepper to taste

fresh lemon thyme to garnish

Directions

1Peel and wash carrots and set aside in a bowl.

2In a small microwave safe bowl, place Nuttelex, maple syrup, salt and pepper and cook on low setting till just melted. Stir to combine.

3Pour glaze over carrots tossing well while glaze is still warm.

4Place on baking tray and roast in a hot oven for 40 minutes or until the carrots become tender and soft.

5Garnish with fresh lemon thyme or your favourite herb of choice.
