The ultimate Aussie Christmas biscuit these classic cookies make a beautiful and personalised gift for work colleagues and neighbours.
1Pre-heat the oven to 180ºC.
2In a bowl, use an electric mixer to beat the butter, sugar, lemon zest, and vanilla until light and fluffy.
3Add the egg and cream and give this a good mix.
4Add the sifted flour, baking powder and macadamias. Knead to form a strong dough.
5Once the dough is firm, divide it into two rectangle bricks. Wrap each brick in cling film and refrigerate for a couple of hours. You can put them into the freezer for a faster chilling time.
6Once the dough is chilled, roll each section out between baking paper until they are 6-7 mm thick.
7Cut the dough with your preferred cookie cutters.
8Bake in the oven for 15 minutes, or until light golden in colour.
9When cooled, dust the biscuits with icing sugar.
