September 11, 2019

Perfect for sharing - these Garlic Bread Pizzas combine all the joy of traditional garlic bread, bruschetta and pizza in one fine base.

Ingredients

Base

500 g plain flour - plus extra for rolling

7 g sachet fast-action yeast

1 tsp salt

2 tbsp olive oil

300 g mozzarella, drained

300 ml warm water

Baked Topping

50 g plant based Nuttelex

2 garlic cloves, crushed

Fresh Topping

4 tomatoes, roughly chopped

1 handful of torn baby basil leaves

1 tbsp extra-virgin olive oil

1 tsp balsamic vinegar

Directions

1Pre-heat oven to 240c fan forced.

2Place all of the base ingredients into a mixing bowl. Pour over 300ml warm water – not too hot. Stir well until the mixture comes together.

3Turn mixture out onto a lightly floured surface and kneed 2 - 3 times until the it holds together as a ball. Then divide into approx 8 pieces.

4Take 1 piece at a time (leaving the remainder loosely covered with oiled cling wrap) and use a rolling pin to flatten the dough into a pizza base shape, about 15cm in diameter so its nice and thin, then place on a prepared baking sheet.

5Next, mix together the Nuttelex and crushed garlic, then spread a little over the pizza and then top with torn pieces of mozzarella

6Repeat for the remaining pieces of dough. You should be able to fit 2 pizzas per baking sheet. Bake pizzas for 12 - 15 minutes, until the base is crisp.

7Lastly, combine the fresh topping ingredients in a bowl (tomatoes, basil, balsamic and olive oil) and sprinkle over pizzas fresh from oven, just before serving
