Christmas Chocolate Beetroot Cake

Rich, moist and decadent this is a great cake for all celebrations. Thanks for the recipe @laura_hobby_baker.

Ingredients

1 1/2 cups plain, gluten free flour

1 cup sugar of choice

1 cup cacao or cocoa

1 cup chopped dark vegan chocolate or chocolate chips

2 tsp baking powder

1 tsp bicarbonate of soda

1 1/2 tsp xanthan gum

1 1/2 cups grated and firmly packed beetroot

3/4 cup melted and cooled Nuttelex plant based butter

1 cup coconut milk

good splash of vanilla essence

1 cup fresh strawberries for serving with cake

Icing

1 cup Nuttelex plant based butter

2 cups sifted icing sugar

1 dash vanilla essence

Directions

Method - Chocolate Beetroot Cake

1Pre-heat oven to 180°C

2Combine all ingredients in a bowl and stir with a spatula (or you can use a stand mixer if you choose to).

3Pour mixture into a lined/greased baking pan bake and bake in oven for around 40 min or until you poke a skewer in & it comes out clean.

Icing

1In a bowl combine 1 cup of Nuttlex with 2 cups of sifted icing sugar a splash of vanilla essence.

2Using an electric hand mixer slowly combine the ingredients, slowly increasing the speed over 2 - 3 minutes, making sure you scrape down the sides until mixture is combined.

3Spread over cooled cake & top with grated chocolate of your choice. Serve with fresh strawberries on the side.
