BBQ Sourdough Subs with Pepperoni & Veg (Vegetarian)

The ultimate camp-fire treat we have made these tasty subs with plant-based pepperoni.  Best made well ahead of time they are ideal as a late night BBQ snack or as your first night under the stars after setting up camp.

Ingredients

2 tbsp plant-based Nuttelex melted

2 sourdough baguettes

280 g jar mixed chargrilled peppers drained

1/2 cup sun-dried tomato strips

2 tbsp caramelised onion relish

10 plant-based pepperoni salami slices

4 cheese slices

Tools

Directions

1Cut each bread stick in half lengthways without cutting all the way thru so on one side the top and bottom of the sub is still connected

2Butter the bases with Nuttelex and layer the subs with onion relish, cheese slices, plant-based pepperoni, tomato strips & the chargrilled peppers.

3Brush each sub with the melted Nuttelex. Then tie each sub with kitchen string to secure them tightly.

4Wrap each roll individually in baking paper then wrap tightly in foil & refrigerate until ready to BBQ

5Preheat a covered barbecue on high. Place the foil wrapped subs on the flat plate of your BBQ (or away from direct flames) and turn after about 5 minutes. Remove after 8 mins and unwrap (carefully) and then cut into slices to serve.
