Spooky Biscuit Stax

How cute are these Layered Halloween biscuits! Perfect for a Halloween themed party, or just for fun!

Ingredients

Biscuits

250 g plant based Nuttelex

1/2 cup castor sugar

1 tsp vanilla essence

1 egg or egg replacer

2 1/4 cups plain flour, sifted

Cream Cheese Filling

100 g cream cheese

60 g plant based Nuttelex

1 1/2 cups icing sugar

yellow gel food colouring

Directions

Biscuits

1Preheat oven to 180°C.

2Mix Nuttelex, sugar and vanilla in a bowl with electric mixer, until light and creamy.

3Add egg and mix until combined.

4Stir in 2¼ cups of flour to form a firm dough.

5Place dough covered in fridge for 15-20 minutes.

6Roll dough and cut into circle shapes.

7Bake in oven for approximately 12-15 minutes.

Cream Cheese Filling

1Mix cream cheese, Nuttelex and icing sugar till creamy and light.

2Add food colouring (sparingly) till desired colour is achieved.

3Spoon into piping bag.

Decorating and assembling the biscuits.

1Once biscuits have cooled, layer biscuits with the cream cheese filling, using 3 biscuits.

2Decorate with Halloween toppings. Pictured here are ready to roll icing witches hats and white ghost.

3Broomsticks can be made with mini pretzel sticks and vermicelli bean thread.

4Edible writing icing to finish off.
