Halloween Pancakes

Family fun for Halloween breakfast or brunch these are thick American-style pancakes. While witches hats and ghosts are fun shapes too, and a bit easier, try the spider webs - they are worth the effort. Serve with a buttering of Nuttelex, plus a sprinkling of sugar and lemon juice or maple syrup, ice cream and fresh berries. #MakeMineWithNuttelex

Ingredients

2 eggs

3 tbsp plant based Nuttelex for frying pancakes

2 cups self raising flour

450 ml milk

1 tsp pure vanilla extract

80 g castor sugar/ monkfruit baking sweetener

Garnish

lemon wedges for the juice

1 tbsp Nuttelex for buttering pancakes

castor sugar

Maple syrup

fresh berries

chocolate drops (can be used as eyes)

frying pan

piping bag or freezer bag - to pipe the pancake batter into shape on the pan

Directions

1Sift flour then add sugar sugar (or sweetener) in a large-sized bowl and make a well in the centre.

2In a separate bowl, whisk the eggs then add milk and vanilla.

3Pour the wet ingredients into the dry ingredients 'well 'and fold together. Mix until smooth (there may be a couple of lumps but that's okay). Set the batter aside at least 30 mins in the fridge.

4If you find the batter too thick fold a couple tablespoons of extra milk into the batter (one at a time) until reaching desired consistency. If making the web pancakes use a piping bag to pipe the shape so make sure the mixture is not too watery.

5Heat your frying pan and grease with Nuttelex.

6To make the web cut 1/4-inch hole in one bottom corner of a piping or freezer bag. For each pancake, gently squeeze bag to release approx. 2 tablespoons of batter onto hot pan in spider web shape. To get a good looking web daw an X then add a cross through it. This gives you eight “prongs” then connect by drawing wobbly weblike circles over it. Witches hats, and ghosts are fun shapes too.

7Cook 1 to 2 minutes or until pancakes are puffed and dry around edges. Turn pancakes; cook about 1 minute longer or until other side is golden brown.

8Repeat with remaining batter.

9Serve with a buttering of Nuttelex, lemon and sugar or maple syrup. Add eyes where needed with the chocolate drops. garnish with fresh berries, maple syrup or ice-cream.
