If you fancy something a little different, you can't go past these delicious stuffed duck bao. A cinch to prepare these take less than 20 minutes from start to finish. Recipe makes 6 stuffed bao, which is ample for two people, or a great snack for three.
For the duck
1 tablespoon sweet soy sauce (Kecap Manis)
2 teaspoons fresh ginger, finely grated
For the bao and filling
6 bao (available from the freezer most Asian stores)
handful fresh coriander leaves
Garnish
sprinkle of sesame seeds for the duck
optional - 2 tablespoons fried shallots (store bought) - adds crunch
1Pre-heat oven to 190°C.
2In a small saucepan, place melted Nuttelex, brown sugar, soy sauce, sweet soy sauce, minced garlic and finely grated ginger. Heat on a low heat and stir until the sugar has dissolved and the glaze is sticky. Adjust flavours to your liking.
3Place duck in a small baking dish. Using a pastry brush, brush the glaze over duck breasts and bake in oven for 10-15 mins depending on size. Remove from the oven and allow to rest for 2 mins and then slice thinly, and sprinkle with sesame seeds.
4Shred cabbage and slice the cucumber into thin batons. Place fried shallots into a small bowl
5Lightly wet the frozen bao buns with water to prevent the dough from cracking, then place the buns on a plate and microwave on high for about one minute. Check that the buns are hot all the way through, and microwave for a bit longer if needed. Let the buns stand for a couple of minutes before serving. Alternatively, if time is on your side, bao can be steamed in a traditional bamboo steamer till cooked through- approx 6-15 mins.
6Spread a teaspoon of Hoisin sauce onto each warm bao. Then layer with slices of duck, cucumber, shredded red cabbage, sprinkle of fried shallots (optional) and coriander leaves.
7Serve immediately.
