GINGERBREAD SKULLS

Great for #Halloween (31st October) or #DayOfTheDead (November 2nd) festivities this dairy-free gingerbread biscuit recipe is a keeper. For soft gingerbreads cook till just lightly browned, for crunchy gingerbreads keep baking until a dark 'n golden deep caramel colour. Perfect with a dusting of icing sugar OR for those who love to decorate with coloured icing and edible inks - the results can be stunning.

Boo-Nanas in Blankets

A super fast and easy last minute treat when spending Halloween at home. Note you can use so many things to create the eyes and mouth. We suggest  black icing, Ice Magic or baking drops as they stick easily, however, by all  means be creative - just keep in mind options like sultanas can be tricky to make them stay-put. For extra scary and hairy Boo-Nanas you can also carefully dip the banana tips in orange juice and then roll the tips in shredded or desiccated coconut before adding the faces.

If using short bananas (like Lady Finger) you may only get 1 boo-nana, the bigger bananas you can get 2 boos per banana!

Sweet & Tangy Caramelised Tofu Banh Mi (Vegan)

This home-made take on the traditional Vietnamese baguette is filled to the brim with pickled veg, chilies, cucumber, cabbage, radish, cilantro, spiced mayo and marinated caramelised tofu. For the most authentic sweet and tangy flavour, make the pickles ahead of time ...two hours is great, but two days is utter perfection.

Serves 4

Note: keep leftover pickles for poke bowls, spring rolls or add to veggie burgers as a fresh tangy topping!

 

Baked Kumara Steaks with Avocado & Corn Salsa

This is a great go-to dish for a veg-filled, warm and crunchy lunch or light supper (serves 2).

It can also make a wonderfully healthy finger food option for entertaining - just choose mini sweet potatoes and multiply the salsa!

Basil Sambal Goreng Tempeh (Vegan)

The heart of a good sambal goreng is the sambal itself, and this version is fragrant with garlic, shallots, the tang of tamarind, and the defining warmth of birds eye/ chilli pad chilles. An easy go-to dish, everyone will just love the tempeh as it is is both air fried and then pan-fried in the sauce to make it wonderfully crunchy, nutty, and toasty.

A sweet treat that is super simple to make. Left overs can be used with apple or rhubarb for a quick crumble for the following night too!
