BBQ Garlic Buttery Mushroom Skewers (Dairy Free)

Because everything tastes better off the grill! These buttery garlicky mushrooms are the tasty little addition your BBQ's have been missing!

Ingredients

2 tbsp balsamic vinegar

1 tbsp soy sauce, tamari or coco aminos

4 garlic cloves (finely minced)

900 g button mushrooms (cut in half)

3 tbsp Nuttelex

a generous pinch of salt

fresh parsley to serve (chopped)

bamboo skewers (pkt)

Directions

1Soak bamboo skewers in a pan of cold water for at least 30 minutes before using (Can also be soaked overnight)

2In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic to make a marinade. Then gently stir in sliced mushrooms till coated Set aside for 30 minutes

3In a small saucepan on a low heat, melt the Nuttelex with remaining garlic and a pinch of salt.

4Heat barbecue /grill or griddle-pan to medium. Next skewer the mushrooms aiming for 4 - 5 pieces on each stick.

5Grill the mushrooms for 5 minutes per side, using tongs to turn them over.

6Plate the mushrooms and drizzle with the garlic buttery mix before sprinkling with salt and chopped parsley. Serve hot.
