A deliciously healthy take on traditional blondies, somewhere in between a slice and cake.
1To dehydrated apples, either dehydrate in a dehydrator at 70°C or preheat oven at 100°C. Place cubed apples on baking tray lined with baking paper and place tray at the base of oven for 1 hour or till apples are dehydrated. Remove from oven and set aside.
2To make the blondies, whisk together plant based Nuttelex and sugar until smooth and combined. Add the egg, egg yolk, vanilla essence and whisk vigorously until smooth and combined. Fold in the flour, and spices until completely combined, then fold in the dehydrated apple cubes.
3Spread the batter evenly onto lined baking tray, and bake in preheated oven (180°C) for about 15 – 20 minutes, or until the centre is no longer jiggly and a toothpick inserted comes out clean. (Be careful not to over bake or blondies will dry out). Remove from oven and allow to cool completely in the pan on a wire rack before inverting and removing the baking paper. Cut into squares.
4Serve with your fave dairy free cream or ice-cream and sprinkle some grated lemon & orange zest
