Sometimes it's the simple things that make us happy, and home-made caramel popcorn, is right up there and here's a dairy free version using plant based Nuttelex that is just as delicious!
1Make the popcorn.
2Salt and set aside on a baking tray lined with foil.
3Melt Nuttelex in a saucepan over medium heat then slowly stir in brown sugar, until combined.
4Stir continuously, bringing the mixture to the boil, then reduce heat to a simmer and add vanilla, then baking soda and mix.
5Remove from heat and drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
6Allow the popcorn to cool.
